Salmonelle e norovirus nei frutti di bosco: colpa di acqua e attrezzature contaminate

L’acqua infetta, le attrezzature contaminate e le precipitazioni sono i fattori che determinano la presenza di virus molto aggressivi nei frutti di bosco. Sono queste le conclusioni di un report pubblicato dall’EFSA sulla contaminazione dei frutti di bosco freschi o congelati da parte di Salmonella e Norovirus. I Norovirus (NoVs) sono particolarmente aggressivi e sono ritenuti in tutto il mondo una delle principali cause di gastroenteriti nell’uomo e negli animali. Questi virus si diffondono attraverso le feci e tramite contatto da persona a persona, oppure assumendo cibo e acqua contaminati. Nel caso dei frutti di bosco la situazione è più complessa perché raramente vengono ingeriti da soli essendo spesso abbinati a torte e biscotti, contenenti latte e derivati.
Come riporta il dossier dell’EFSA, le epidemie associate a Norovirus in lamponi surgelati e fragole sono un rischio emergente, anche se ancora non è chiaro in quale fase della filiera questi focolai prendono origine. «Per comprendere la complessità della questione – spiega Fausto Gardini, docente di Microbiologia degli alimenti presso l’Università di Bologna – bisogna partire dalla scarsità di letteratura sull’argomento. Rispetto all’elevato rischio che queste sostanze portano con sé per la salute dei consumatori, la ricerca è ancora molto lontana dall’avere acquisito misure preventive valide ed efficaci. Questo perché le tecniche microbiologiche per rilevare questi virus sono molto complesse»

THE EXPERIENCE OF IMPARA DIGITALE
Dianora Bardi is a teacher, graduated in Literature in 1978. She taught in high schools and worked with several Italian universities until 1998, when she met Giovanni degli Antoni, the great guru of informatics in Italy, and she decided to work with him for ten years. After this period, Dianora developed a new teaching method for mobile devices (iPad and EbookReaders) that more than 30 schools today apply. In order to model this method, the Centre for Studies Impara Digitale is born, founded together with other teachers, academics, software developers and other experts.
